Zucchini Bread with Blue Cheese and Walnuts

This zucchini bread with blue cheese and walnuts is to die for. Another simple recipe made with all natural ingredients. Filling and delicious.
Ingredients:
- 1 medium zucchini
- 2 cups of flour (use whole grain such as buckwheat or spelt)
- butter
- 3-4 medium to large eggs
- blue cheese
- cheddar cheese (extra old is best)
- salt
- walnuts
- milk
- optional: nutmeg and/or cinnamon
Tools:
- small mixing bowl
- large mixing bowl
- spatula
- 2 pyrex type dishes (approximately 8 X 12)
- whisk or hand blender
- dish to melt butter
- small knife
- grater
- tin foil
Directions:
- Grate zucchini & Cheese (choose how much or little)
- Mix together with flour, salt, walnuts and spices
- Melt butter and beat with eggs and milk
- Add liquid to flour mix and stir until blended
- Butter the tray so the mixture doesn’t stick
- Turn oven to 350 and cook for about 1 hour 15 minutes
- Check at about 40 minutes and cover top with tin foil if it is too brown
These are delicious served piping hot but are a filling breakfast and snack. An excellent way to get rid of any extra zucchini, which you can grate and freeze to make all winter. Variations are of course possible but this one is my favourite.
